QUESO BLANCO

 

2.5 litre Whole cream milk

¼ cup lime : White vinegar : Verjuice

Pinch Salt

 

Heat Milk &  slowly bringing to the boil stiring to prevent scalding

 

After a couple of min  add lemon : verjuice : white wine in a zig zag motion to spread through milk mixture..

 

Stir through once or twice to spread acids

 

Leave to simmer for  a few minutes

 

After curdes have separated pour into cheesecloth lined colander & let Drain for 10min

 

Don’t forget to keep the whey

 

Sprinkle the curds with salt ( some will drain away so do’nt worry)

 

Add any extra herbs you might fancy

 

I was told a good idea recently to tie up ends & hang it over your tap in the sink

 

Leave to drain overnight if you can

 

 Next morning Presto Queso Blanco
